Ingredients

For the Cinnamon Sugar Swirl

  • 1/3 cup light brown sugar
  • 1 tsp ground cinnamon

For the Bread Batter

  • 2/3 cup sugar
  • 1/2 cup butter (softened)
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 3/4 tsp baking powder
  • 1/2 cup milk

For the Apple Mixture

  • 2 apples (peeled and chopped)
  • 2 tbsp sugar
  • 1 tsp ground cinnamon

For the Glaze

  • 1/2 cup powdered sugar
  • 3 tbsp milk

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan thoroughly to prevent sticking.
  2. Make Cinnamon Sugar Mixture: In a small bowl, combine 1/3 cup light brown sugar and 1 teaspoon ground cinnamon. Set this mixture aside for layering.
  3. Cream Butter and Sugar: In a mixing bowl, cream together 1/2 cup softened butter and 2/3 cup sugar until light and fluffy. This creates a smooth base for the batter.
  4. Add Eggs and Vanilla: Beat in 2 eggs one at a time, then stir in 1 1/2 teaspoons vanilla extract until well combined.
  5. Combine Dry Ingredients: In a separate bowl, mix 1 1/2 cups all-purpose flour with 1 3/4 teaspoons baking powder.
  6. Make Batter: Gradually add the dry ingredients to the butter mixture alternating with 1/2 cup milk, mixing gently until just combined to form a smooth batter.
  7. Prepare Apple Mixture: Toss the peeled and chopped 2 apples with 2 tablespoons sugar and 1 teaspoon ground cinnamon to coat evenly.
  8. Layer Batter, Apples, and Cinnamon Sugar: Spread half of the batter into the prepared loaf pan. Add half of the apple mixture evenly over the batter, then sprinkle half of the cinnamon sugar. Repeat layers with the remaining batter, apples, and cinnamon sugar to create distinct swirls in the bread.
  9. Bake: Place the loaf pan in the oven and bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean.
  10. Cool and Glaze: Allow the bread to cool in the pan for about 20 minutes. Meanwhile, mix 1/2 cup powdered sugar with 3 tablespoons milk to make a smooth glaze. Drizzle the glaze over the warm bread once slightly cooled.
  11. Serve: Slice the apple fritter bread and enjoy the warm, cinnamon-apple flavors with the sweet glaze topping.

Notes

  • Make sure to peel and chop the apples evenly for uniform texture and flavor.
  • You can use Granny Smith or other tart apples for a nice balance with the sweetness.
  • Don’t overmix the batter to keep the bread tender and soft.
  • Test doneness with a toothpick to avoid overbaking and dryness.
  • The glaze adds a nice sweetness but can be skipped for a less sweet bread.
