  • 1 sweet Italian sausage, casing removed
  • 3 small Yukon Gold potatoes, cut in half
  • 3 boneless, skinless chicken thighs, cut into 2-inch pieces

  • Freshly ground black pepper to taste
  • 1 pinch cayenne pepper
  • 1 teaspoon dried Italian herb blend
  • 1 small red onion, sliced
  • 1 cup sliced red bell pepper
  • ½ cup chicken broth
  • ½ lemon, juiced

To Serve

  • 2 slices Italian bread, toasted
  • 1 tablespoon chopped fresh Italian parsley

Instructions

  1. Prepare Ingredients: Gather all the ingredients and prep the sausage by removing its casing, halve the potatoes, cut the chicken thighs into 2-inch pieces, and slice the onion and bell pepper.
  2. Heat Skillet and Add Ingredients: Pour 2 tablespoons of olive oil into a nonstick skillet over medium-high heat. Break the sausage into small pieces and add to the pan.
  3. Add Potatoes and Chicken: Add the potato halves sporadically to the skillet, placing them flesh-side down. Distribute the chicken pieces throughout the pan, smooth side down.
  4. Season: Season everything with kosher salt, freshly ground black pepper, and a pinch of cayenne pepper. Sprinkle the dried Italian herb blend evenly over the ingredients.
  5. Scatter Vegetables: Add the sliced red onion and bell peppers over the meat and potatoes.
  6. Sear: Cook uncovered over high heat until the sausage starts to brown, about 5 minutes, stirring occasionally to prevent burning but allowing browning.
  7. Cover and Cook: Reduce heat to medium-high, cover the skillet, and cook until the potatoes are just tender, approximately 5 minutes.
  8. Add Broth and Reduce: Pour in ½ cup of chicken broth and cook uncovered until the broth reduces by at least half, intensifying the flavors.
  9. Finish and Season: Stir the mixture and squeeze the juice of half a lemon over it. Taste and adjust seasoning with additional salt or pepper if needed.
  10. Serve: Serve the hearty mixture over toasted Italian bread and garnish with chopped fresh Italian parsley for a fresh finish.
