This One Pan Creamy Gnocchi with Sausage is a comforting, quick, and delicious Italian-inspired dish. Made with savory Italian sausage, tender gnocchi, and a creamy tomato sauce enriched with parmesan and fresh basil, it delivers a perfect balance of flavors in just 30 minutes, all cooked in a single skillet for easy cleanup.

Ingredients

Meat and Aromatics

  • 16 ounces Italian sausage (casings removed)
  • 1/2 small onion, finely chopped
  • 4 cloves garlic, minced

Liquids and Dairy

  • 1/3 cup dry white wine (e.g. sauvignon blanc)
  • 1 cup heavy/whipping cream
  • 1/2 cup freshly grated parmesan cheese

Other Ingredients

  • 1 (14 ounce) can diced tomatoes with juices
  • 1 pound uncooked potato gnocchi
  • Handful fresh basil, torn
  • Salt and pepper, to taste

Instructions

  1. Sauté sausage and onion: In a large skillet over medium-high heat, cook the Italian sausage and finely chopped onion together for 7 to 10 minutes, stirring occasionally, until the sausage is lightly browned and the onion is softened.
  2. Add garlic: Stir in the minced garlic and sauté for about 30 seconds until fragrant but not burnt.
  3. Deglaze with wine: Pour in 1/3 cup of dry white wine and cook for about 1 minute to allow the alcohol to evaporate and flavors to meld.
  4. Add tomatoes, cream, and gnocchi: Stir in the canned diced tomatoes with their juices, heavy cream, and uncooked potato gnocchi. When the sauce begins to bubble, cover the skillet and reduce the heat to medium. Let it cook for 5 minutes.
  5. Simmer uncovered: Remove the lid, stir thoroughly, and continue cooking the gnocchi uncovered for a few more minutes until the gnocchi is tender and the sauce has thickened to your preference.
  6. Finish and serve: Stir in the freshly grated parmesan cheese, torn basil leaves, and season with salt and pepper to taste. Serve immediately while hot.

Notes

  • If you prefer a spicier flavor, use spicy Italian sausage instead of mild.
  • For a lighter option, substitute heavy cream with half-and-half or whole milk, though the sauce will be less rich.
  • Pair this dish with a simple green salad or garlic bread for a complete meal.
  • If white wine is unavailable or undesirable, chicken broth can be used as a substitute.
  • Ensure not to overcook the gnocchi to maintain its tender yet slightly chewy texture.
