Ingredients

  • 2 chicken breasts, cut into small cubes
  • 1 small onion, chopped
  • 4 cloves garlic, minced
  • 2 cups broccoli florets

  • ¾ cup uncooked rice
  • 1 cup cheddar cheese
  • 1 tablespoon fresh parsley, chopped

Liquids & Seasoning

  • 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 10 ounces cream of chicken soup (1 can)
  • 2 cups low sodium chicken broth (plus more if needed)

Instructions

  1. Cook the onion and chicken: Heat olive oil in a large ovenproof skillet over medium heat. Add chopped onion and cubed chicken, cooking for about 5 minutes until chicken starts to brown and is no longer pink. Season with salt and pepper. Stir in minced garlic and cook for an additional 30 seconds until aromatic.
  2. Add the rice and liquids: Stir in the uncooked rice, cream of chicken soup, and 2 cups of low sodium chicken broth. If needed, additional broth can be added later to ensure the rice cooks through fully.
  3. Cook the rice: Bring the mixture to a boil, then reduce heat to medium-low. Cover and simmer, stirring occasionally, for about 15 minutes or until the rice is fully cooked. Taste and adjust seasoning if necessary.
  4. Finish with broccoli and cheese: Stir in the broccoli florets and half of the cheddar cheese. Continue cooking uncovered for 2 minutes until broccoli softens slightly. Sprinkle the remaining cheese over the top and transfer the skillet under the broiler for 2-3 minutes, or until the cheese melts and begins to brown.
  5. Garnish and serve: Remove from the broiler, garnish with fresh chopped parsley, and serve hot.
