Ingredients

Sausage

  • 13 oz. andouille sausage links (about 4 links), sliced into medallions

Vegetables

  • 6 oz. fresh baby bella mushrooms, cleaned and thinly sliced
  • 1/2 medium red bell pepper, stemmed, seeds removed, and thinly sliced
  • 1/2 medium yellow bell pepper, stemmed, seeds removed, and thinly sliced
  • 3 large garlic cloves, minced
  • 1/2 cup canned, diced fire-roasted tomatoes

Pasta and Liquids

  • 12 oz. gluten-free penne pasta
  • 3 1/2 cups chicken broth

Seasonings and Dairy

  • 2 tablespoons no-salt or low-salt Cajun seasoning mix
  • 7 oz. cream cheese
  • Salt, to taste
  • Fresh Italian parsley, finely chopped (optional)
  • Red pepper flakes (optional)

Instructions

  1. Cook sausage: Add the sliced andouille sausage medallions to a large skillet or braiser over medium heat and sear them on both sides until they become slightly crispy, about 4 minutes total. Once cooked, remove the sausage and place it on a paper towel-lined plate to drain. Keep the rendered sausage oil in the skillet for the next steps.
  2. Cook veggies: In the same skillet with the sausage oil, add the sliced mushrooms, red and yellow bell peppers, and minced garlic. Sauté them together for about 3 minutes or until the mushrooms start to brown and the veggies soften slightly.
  3. Add ingredients: To the skillet, add the gluten-free penne pasta, diced fire-roasted tomatoes, chicken broth, and Cajun seasoning. Stir gently to combine everything evenly. Cover the skillet with a lid and bring the broth to a boil over medium-high heat.
  4. Cook pasta: Once boiling, reduce the heat to medium and let the pasta simmer for approximately 12 to 15 minutes. Stir every couple of minutes to prevent sticking and ensure the pasta cooks evenly until it is tender but still al dente.
  5. Add cream cheese: Cut the cream cheese into chunks and add it to the skillet. Stir continuously until the cream cheese melts completely, creating a thick and creamy Cajun sauce that coats the pasta and vegetables beautifully.
  6. Combine and serve: Return the cooked sausage medallions to the skillet and season with salt to taste. Give everything a thorough stir to combine all flavors. Finish by sprinkling fresh Italian parsley and red pepper flakes on top for added color and a little extra heat if desired. Serve immediately and enjoy!

Notes

  • Use the rendered sausage oil from cooking the sausage to add depth of flavor to the vegetables and sauce.
  • Adjust the Cajun seasoning to your spice preference; this recipe uses a low-salt blend to control sodium.
  • Be sure to stir the pasta regularly while simmering to avoid sticking to the bottom of the pan.
  • This recipe works well with gluten-free pasta, but regular penne pasta can be substituted if preferred.
  • Fresh parsley and red pepper flakes are optional but add fresh brightness and a little extra heat that complements the Cajun flavors.
