Oven-Baked Cabbage Burgers are a delicious low-carb alternative to traditional buns, featuring roasted cabbage slices topped with flavorful homemade beef patties and melted cheese. This recipe combines tender roasted cabbage with seasoned ground beef, cheese, and a touch of tomato sauce for a wholesome, satisfying meal that’s perfect for a quick weeknight dinner or a healthy twist on burger night.

Ingredients

Cabbage and Seasoning

  • 1 head of green cabbage, cut into 1-inch slices
  • Oil for brushing (about 2 tablespoons)
  • Salt and black pepper to taste

Beef Patties

  • 1 pound lean ground beef
  • 1 teaspoon grated garlic
  • 1/2 cup chopped green onion
  • 1/2 cup chopped parsley
  • 1/2 teaspoon red chili pepper flakes
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup shredded cheese (mozzarella or Monterey Jack), divided

Toppings

  • 1/2 cup tomato sauce or ketchup
  • Additional fresh herbs for garnish (optional)

Instructions

  1. Preheat and Prepare Cabbage: Preheat your oven to 400ºF (200ºC). Arrange the cabbage slices on a rimmed sheet pan. Lightly brush oil on both sides of the cabbage slices and season with salt and black pepper to taste.
  2. Roast Cabbage: Roast the cabbage slices in the preheated oven for about 10 minutes to precook them. This step prevents the cabbage from becoming overly soggy or overcooked once the beef patties bake on top.
  3. Prepare Beef Mixture: While the cabbage roasts, combine the lean ground beef, grated garlic, chopped green onion, chopped parsley, red chili pepper flakes, half of the shredded cheese, salt, and black pepper in a large bowl. Mix gently but thoroughly to evenly distribute the seasonings.
  4. Form Patties: Divide the beef mixture into four equal portions and shape each portion into a patty that will fit nicely on the cabbage slices.
  5. Assemble Burgers: Remove the cabbage slices from the oven. Spread about one tablespoon of tomato sauce or ketchup on each cabbage slice, then sprinkle each with a bit of the remaining shredded cheese. Place a beef patty on top of each slice and finish by topping with the rest of the shredded cheese.
  6. Bake Burgers: Return the assembled cabbage burgers to the oven and bake for an additional 10 to 12 minutes, or until the beef patties are cooked through to your desired doneness and the cheese has melted and is bubbly.
  7. Garnish and Serve: Remove the cabbage burgers from the oven, sprinkle with additional fresh herbs if desired, and serve immediately while warm for the best flavor and texture.

Notes

  • Use a rimmed sheet pan for easier handling and to catch juices during roasting.
  • Make sure to slice the cabbage into even, 1-inch thick slices to ensure uniform cooking.
  • Adjust seasoning in the beef mixture to your taste, adding more chili flakes for extra heat if desired.
  • For a lower-fat option, use lean ground turkey instead of beef.
  • The recipe works well with either tomato sauce or ketchup as a topping, depending on your preference.
  • Optional fresh herbs like parsley or cilantro add a fresh burst of flavor when sprinkled on top before serving.
