Ingredients

Salmon and Marinade

  • 6 Salmon fillets
  • 2 tsp extra-virgin olive oil (plus additional for sheet pan)
  • 1 1/2 tbsp fresh parsley, finely chopped
  • 4 tsp minced garlic
  • 4 tbsp Maille Honey Dijon or your favorite honey mustard
  • 1 tsp fresh lemon juice
  • Salt and ground pepper, to taste
  • Lemon wedges for garnish (optional)

Brine

  • 3 cups cold water
  • 3 tbsp salt

Roasted Spinach

  • 10 oz fresh spinach (add more if you prefer extra spinach)

Instructions

  1. Make the brine: In a large shallow bowl or baking dish, dissolve 3 tablespoons of salt into 3 cups of cold water to create the brine.
  2. Brine the salmon: Place the 6 salmon fillets flesh-side down into the salted water. Let them brine for 15-20 minutes to enhance moisture and flavor.
  3. Preheat the oven: Set your oven to 425°F (220°C) to prepare for roasting the salmon and spinach.
  4. Prepare the honey mustard glaze: In a small bowl, combine 4 tablespoons of Maille Honey Dijon, minced garlic, fresh chopped parsley, and lemon juice. Mix well to blend all flavors.
  5. Season and glaze the salmon: Remove the salmon from the brine and pat completely dry with paper towels. Season both sides with ground pepper. Brush olive oil over both sides of the fillets, then evenly brush half of the honey mustard mixture onto each fillet. Place the fillets on a baking sheet prepared with a light coating of olive oil.
  6. Roast the salmon: Roast the salmon fillets in the oven for approximately 20 minutes until cooked through and flaky.
  7. Toss and roast the spinach: While the salmon roasts, combine the remaining honey mustard mixture with the fresh spinach in a bowl, tossing to coat evenly. Spread the spinach on a small baking sheet and roast in the oven for 5-7 minutes until wilted but still vibrant green.
  8. Serve: Plate the roasted spinach and top with a salmon fillet. Optionally, brush additional Maille Honey Dijon honey mustard on the salmon. Garnish with lemon wedges if desired and serve immediately.
