  • ½ cup canned black beans (drained & rinsed)
  • 3 cups shredded cheese (Mexican cheese blend or any cheese of choice)
  • ¾ cup pico de gallo (or chopped fresh tomatoes, onions, and jalapenos)
  • 10-12 cups corn tortilla chips (about 1 large bag)
  • 1 cup cooked meat (shredded salsa chicken, rotisserie chicken, ground beef, or turkey)

Optional Toppings

  • Canned diced green chilis
  • Sour cream (crema or white sauce)
  • Salsa or hot sauce
  • Fresh veggies & herbs: avocado slices, jalapeno, red onion, radishes, lettuce, fresh cilantro

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (204°C) and prepare a baking sheet by either spraying it with oil or lining it with a silicone baking mat to prevent sticking.
  2. Assemble Nachos: Spread the corn tortilla chips out in an even layer on the prepared baking sheet. Evenly sprinkle the drained black beans and pico de gallo (and your chosen cooked meat, if using) over the chips. Then generously top everything with the shredded cheese.
  3. Bake: Place the baking sheet in the preheated oven and bake for 8-10 minutes, or until the cheese has melted fully and is bubbly and golden.
  4. Add Fresh Toppings: Remove the nachos from the oven and immediately add your preferred fresh toppings such as hot sauce, avocado slices, sour cream, fresh cilantro, and any other fresh veggies or herbs you enjoy.
