  • 3 1/3 cups baby spinach, washed
  • 1/3 cup crumbled feta

Instructions

  1. Crush fennel seeds: Lightly crush the fennel seeds using a pestle and mortar to release their aromatic oils.
  2. Toast pine nuts: Heat a frying pan on medium-high and toast the pine nuts until they turn golden brown, then remove and set aside.
  3. Fry gnocchi: Add butter and olive oil to the pan and heat until bubbling. Fry the gnocchi, turning regularly, until browned on all sides. Remove and set aside.
  4. Toast fennel seeds: Add the crushed fennel seeds to the pan and toast for 1-2 minutes until fragrant.
  5. Sauté chili and garlic: Add chopped chili and minced garlic, cooking for a couple of minutes until fragrant.
  6. Cook tomatoes: Add chopped tomatoes and fry for a few minutes until they soften.
  7. Wilt spinach: Add baby spinach and cook until wilted, stirring occasionally.
  8. Combine gnocchi and feta: Reduce heat to low, return the fried gnocchi to the pan, and gently stir in the crumbled feta cheese.
  9. Serve: Remove from heat, garnish with toasted pine nuts and freshly ground black pepper, then serve immediately.
