Tender flank steak is coated with a savory parmesan and garlic crust, while red potatoes and asparagus are roasted to perfection with herbs and parmesan for a complete, delicious one-pan dinner ready in just 30 minutes.

Ingredients

Steak

  • 1 1/2 lb flank steak
  • 1 tbsp olive oil
  • 2 cloves garlic
  • 2 tbsp grated Parmesan cheese
  • 1/2 tsp cracked black pepper
  • Sea salt, to taste

Potatoes

  • 2 lb red potatoes (quartered or eighths if large)
  • 2 tbsp olive oil
  • 2 tbsp grated Parmesan cheese (plus extra for tossing)
  • 1 minced garlic clove
  • 1/2 tsp cracked black pepper
  • 1 tsp dried parsley
  • Sea salt, to taste

Asparagus

  • 1 lb asparagus, ends trimmed
  • 1/2 tbsp olive oil
  • 1 minced garlic clove
  • Remaining grated Parmesan cheese
  • Sea salt and cracked black pepper, to taste

Instructions

  1. Preheat Oven: Preheat your oven to the Broil setting on High to prepare for cooking the potatoes and steak.
  2. Prepare Vegetables: Rinse and pat dry the asparagus after slicing off the ends. Cut the red potatoes into quarters or eighths if they are large, setting them aside for seasoning.
  3. Season Potatoes: In a medium bowl or directly on the sheet pan, toss the quartered potatoes with 2 tablespoons olive oil, 2 tablespoons Parmesan, 1 minced garlic clove, 1/2 teaspoon cracked pepper, sea salt to taste, and dried parsley. Toss thoroughly to coat them well. Add extra Parmesan if desired for added crust and flavor.
  4. Broil Potatoes: Spread the seasoned potatoes evenly across the sheet pan and broil for 6-8 minutes until they begin to lightly brown.
  5. Prepare Steak: While potatoes broil, rub the steak with 1 tablespoon olive oil on both sides and season with sea salt. Spread 2 whole garlic cloves and the remaining cracked black pepper over the steak, then sprinkle 2 tablespoons Parmesan evenly on top.
  6. Add Steak and Asparagus: When potatoes are lightly browned, push them to one side of the pan and place the prepared steak alongside. Add the trimmed asparagus next to the steak, drizzle with 1/2 tablespoon olive oil, sprinkle with remaining Parmesan, minced garlic clove, sea salt, and pepper.
  7. Broil Steak and Veggies: Return the sheet pan to the oven and broil the steak for about 4-6 minutes on each side. Check the steak for medium doneness; cook an additional 2 minutes per side if a more well-done steak is desired. You may need to remove the asparagus earlier if it cooks faster.
  8. Rest and Serve: Remove the pan from the oven and let the steak rest for 5-10 minutes to retain juices. Serve with an extra sprinkle of Parmesan on top and enjoy your delicious sheet pan dinner!
