Ingredients

Dough Ingredients

  • 1 package (8g) active dry yeast (about 2 ¼ teaspoons)
  • ¾ cup (177ml) milk
  • ⅓ cup (67g) granulated sugar
  • 3 tablespoons (42g) unsalted butter, softened
  • ½ teaspoon salt
  • 1 large egg
  • 3 cups (372g) all-purpose flour (plus more for dusting)

Filling Ingredients

  • ⅔ cup (134g) packed brown sugar
  • 1 tablespoon ground cinnamon
  • ¼ cup (67g) peanut butter
  • 1 cup (170g) mini chocolate chips (optional)

Peanut Butter Frosting

  • ½ cup (145g) creamy peanut butter
  • 4 tablespoons (57g) unsalted butter, softened
  • 2 cups (226g) powdered sugar
  • ½ teaspoon vanilla extract
  • 3 tablespoons heavy whipping cream

Instructions

  1. Proof the Yeast: Warm the milk in a microwave-safe measuring cup for 30-45 seconds until it reaches 110-120°F. Add the yeast and ½ teaspoon of the granulated sugar from the portion required, stir, and let it sit for a few minutes until bubbly.
  2. Mix Wet Ingredients: In a stand mixer bowl fitted with the paddle attachment, combine the remaining granulated sugar, softened butter, salt, and egg. Mix until the butter is incorporated, though it may appear chunky.
  3. Add Yeast Mixture: Pour in the milk and yeast mixture, stirring for a few seconds to combine.
  4. Add Flour and Form Dough: Add all the flour to the mixture and stir with the paddle attachment just until the dough begins to stick to the paddle. Switch to the dough hook and knead on low speed until the dough forms a cohesive ball.
  5. First Rise: Spray a large bowl with cooking spray, place the dough ball inside, and lightly spray the top of the dough. Cover with plastic wrap and let rise in a warm place for 1-2 hours or until doubled in size.
  6. Prepare Filling: Combine brown sugar and cinnamon in a bowl. Microwave ¼ cup peanut butter for 30-60 seconds until pourable.
  7. Shape Rolls: Roll out the risen dough on a floured surface into a 12” x 9” rectangle. Spread warmed peanut butter evenly over the dough, then sprinkle with the cinnamon sugar mixture and optional chocolate chips.
  8. Roll and Slice: Roll the dough tightly from the long side into a log. Slice into 12 equal rounds and place them into a nonstick sprayed 9x13-inch baking pan.
  9. Second Rise: Let the rolls rise again for about 1 hour until swollen, or cover and refrigerate overnight if preparing ahead.
  10. Bake Rolls: Preheat your oven to 350°F. If chilled, allow rolls to come to room temperature. Remove plastic wrap and bake for 15-25 minutes until golden brown.
  11. Make Frosting: Beat peanut butter and softened butter with a hand mixer until creamy. Add powdered sugar and mix until crumbly. Incorporate vanilla and 2 tablespoons heavy cream, adding more cream as needed to reach desired consistency.
  12. Frost and Serve: Spread the peanut butter frosting over warm rolls. Serve immediately for best texture and flavor.
  13. Storage: Store rolls loosely covered at room temperature for up to 2 days or tightly wrapped and frozen for up to 2 months.

Notes

  • Ensure milk is heated to 110-120°F to properly activate yeast; higher temperatures can kill yeast.
  • If your home is cold, the dough may take longer than 2 hours to rise; be patient and allow it to double in size fully.
  • Chocolate chips in the filling are optional but add extra sweetness and texture.
  • For overnight preparation, refrigerate rolls after shaping and cover tightly, then bake when ready.
  • Adjust heavy cream in frosting for preferred thickness of icing.
  • Allow rolls to cool slightly before frosting to prevent melting.
  • Dust your work surface with flour to prevent dough from sticking when rolling out.
