Made with Greek yogurt, creamy peanut butter, and a touch of sweetness from maple syrup or honey, these bars are topped with crunchy roasted peanuts and dipped in a rich chocolate coating. Ingredients

Frozen Yogurt Mixture

  • 1 cup plain Greek yogurt
  • ½ cup creamy peanut butter
  • 1 tablespoon maple syrup or honey
  • 1 teaspoon vanilla extract
  • 2 tablespoons roasted and salted peanuts (optional)

Chocolate Coating

  • 1 cup chocolate chips or chopped chocolate (6 oz.)
  • 2 tablespoons coconut oil

Instructions

  1. Prepare the Pan: Line a baking sheet with wax paper or a silicone baking mat to prevent the bars from sticking.
  2. Mix the Frozen Yogurt: In a small bowl, combine the Greek yogurt, creamy peanut butter, maple syrup or honey, and vanilla extract. Stir until the mixture is smooth and well blended.
  3. Form the Bars: Using a cupcake or ice cream scoop, spoon about half of the yogurt mixture into 4-6 mounds on the lined baking sheet. Press a popsicle stick into each mound, then cover each with the remaining yogurt mixture using the scoop. Slightly flatten the mounds with a small offset spatula for even bars.
  4. Add Peanuts and Freeze: Sprinkle the roasted and salted peanuts evenly over the yogurt mounds. Place the pan in the freezer and let it freeze for at least 2 hours until the bars are solid.
  5. Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave at 50% power for 30 seconds, stir, then continue microwaving in 15-20 second intervals, stirring after each, until the chocolate is fully melted and smooth.
  6. Dip the Frozen Bars: Remove the frozen yogurt bars from the freezer and dip each pop into the melted chocolate, coating them completely. Place the dipped bars back onto the lined pan.
  7. Serve or Store: Enjoy the bars immediately for a soft chocolate shell or return them to the freezer for a firmer coating. Let the bars thaw for 5-10 minutes before eating to make them easier to bite into.
