These Pepperoni Pizza Bombs are a delicious, bite-sized twist on classic pizza, featuring buttermilk biscuits stuffed with pepperoni, mozzarella, and pizza sauce. Perfectly baked and brushed with a garlic butter topping, they make a fun and savory appetizer or snack for any occasion.

Ingredients

Pizza Bombs

  • 1 (16.3 oz) can buttermilk Grands Southern homestyle biscuits (8 count)
  • 1/2 cup pizza sauce or marinara
  • 16 slices pepperoni
  • 8 oz mozzarella cheese, cut into 1-inch cubes

Garlic Butter Topping

  • 2 tablespoons melted butter
  • 1 tablespoon minced garlic
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons shredded parmesan cheese

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Prepare Biscuits: Using your hands, flatten each biscuit gently into a flat, round shape, roughly expanding their size to hold the filling.
  3. Add Fillings: Spoon about 1 ½ teaspoons of pizza sauce onto the center of each flattened biscuit. Add 2 pepperoni slices on top of the sauce and place one mozzarella cube over the pepperoni.
  4. Seal the Bombs: Carefully gather the edges of the biscuit dough around the filling, pinching tightly to seal the edges completely. Pull up the ends and pinch until no gaps remain, ensuring the filling is fully enclosed.
  5. Arrange on Baking Sheet: Place each sealed pizza bomb seam side down onto the prepared baking tray. Repeat this process for all the biscuits.
  6. Prepare Garlic Butter: In a small bowl, whisk together melted butter, minced garlic, Italian seasoning, salt, and black pepper until well mixed.
  7. Brush and Sprinkle: Brush the garlic butter mixture generously over each pizza bomb. Then evenly sprinkle shredded parmesan cheese on top of the bombs.
  8. Bake: Bake in the preheated oven for 15 to 20 minutes, or until the pizza bombs turn golden brown and the cheese inside is melted.
  9. Rest and Serve: Remove from the oven and let the pizza bombs rest for 5 minutes before serving to allow the filling to set slightly.

Notes

  • Make sure to seal the biscuit dough completely to prevent the filling from leaking during baking.
  • Use marinara or pizza sauce with good flavor for the best taste.
  • These pizza bombs can be served with extra pizza sauce or ranch dressing for dipping.
  • For a spicier version, add a pinch of red pepper flakes to the garlic butter mixture.
  • Store leftovers in an airtight container in the refrigerator and reheat in the oven for best texture.
