This Perfect Roast Beef recipe yields a tender, flavorful roast with a perfectly browned crust, infused with fresh herbs and garlic. Slow-roasted to medium or medium-well perfection, it's ideal for a comforting family dinner or special occasion.

Ingredients

Beef Roast

  • 1 (4-lb.) round roast

Seasoning Rub

  • 3 cloves garlic, finely chopped
  • 1/4 cup extra-virgin olive oil
  • 4 teaspoons kosher salt
  • 1 tablespoon finely chopped fresh rosemary
  • 1 tablespoon finely chopped fresh thyme leaves
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Prepare the Roast: Place the roast on a wire rack set inside a baking sheet. Refrigerate uncovered for at least 1 hour or up to overnight. This helps to dry out the surface for a better crust.
  2. Preheat Oven and Season: Arrange a rack in the center of the oven and preheat to 450°F (232°C). In a small bowl, combine finely chopped garlic, olive oil, kosher salt, rosemary, thyme, and freshly ground black pepper. Rub this mixture all over the roast thoroughly. Place the roast on a large roasting pan fitted with a rack to allow even heat circulation.
  3. Roast at High Heat: Roast the beef at 450°F for 15 minutes to sear the outside, locking in juices and developing a flavorful crust.
  4. Continue Roasting at Lower Temperature: Reduce the oven temperature to 325°F (163°C). Continue roasting until an instant-read thermometer inserted into the center reads 135°F for medium rare, approximately 1 hour and 20 to 30 minutes. For medium-well, cook until thermometer reaches 145°F, about 2 hours total. Note that the roast will continue cooking during resting.
  5. Rest the Roast: Remove the roast from the oven and let it rest for 15 to 30 minutes before carving. Resting allows the juices to redistribute, ensuring a moist and tender final product.

Notes

  • Refrigerating uncovered helps form a better crust when roasting.
  • Use a meat thermometer to achieve desired doneness accurately.
  • Letting the meat rest before slicing is crucial for juicy slices.
  • Adjust roasting time slightly based on oven variations and roast thickness.
