Ingredients

Cauliflower and Seasoning

  • 1 large head of cauliflower, cut into florets (about 2 1/2 pounds)
  • 3 tablespoons olive oil or avocado oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cumin
  • 1/2 - 3/4 teaspoon kosher salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C) and prepare a large rimmed baking sheet by lining it with parchment paper for easier cleanup, if desired.
  2. Prepare Cauliflower: In a large bowl, add the cauliflower florets and toss them thoroughly with olive oil or avocado oil, chili powder, garlic powder, onion powder, cumin, kosher salt, and black pepper. Make sure the spices are evenly distributed over all florets.
  3. Arrange on Baking Sheet: Transfer the seasoned cauliflower to the prepared baking sheet, spreading the florets out evenly. Try to place as many florets as possible with their flat, cut side down to maximize contact with the pan for the best caramelization.
  4. Roast Cauliflower: Put the baking sheet in the oven and roast the cauliflower for 20-26 minutes, flipping the florets halfway through to ensure even cooking. Roast until the pieces are tender and beautifully caramelized; if you prefer extra crispy edges, you can roast a little longer.
