Chicken and Toppings

  • 4 boneless, skinless chicken breasts (about pounds)
  • 4 slices fresh mozzarella
  • ½ cup pesto, homemade or store bought

Instructions

  1. Preheat the oven: Preheat your oven to 400°F and position a rack in the center. This ensures even baking for the chicken breasts.
  2. Prepare the bruschetta mixture: In a small bowl, combine the cherry tomatoes, minced garlic, ¼ teaspoon salt, ¼ teaspoon black pepper, 2 tablespoons olive oil, white balsamic vinegar, lemon juice, and thinly sliced basil leaves. Mix well and set aside to marinate for 20 minutes to let the flavors meld.
  3. Prepare the chicken: Pat the chicken breasts dry with paper towels to ensure they roast properly. Rub all over with the remaining 2 tablespoons of olive oil, the remaining 1 teaspoon salt, and additional black pepper as desired. Place the chicken breasts in a baking dish in a single layer.
