A quick and delicious Pesto Halloumi Sandwich featuring golden-browned halloumi cheese, fresh baby spinach, and sweet roasted red bell peppers, all nestled inside a ciabatta or focaccia roll spread with flavorful pesto. Perfect for a satisfying vegetarian lunch or light dinner in just 15 minutes.

Ingredients

Sandwich Components

  • 8oz halloumi, sliced into ¼” slices (about 9 pieces)
  • ⅓ cup baby spinach
  • ½ cup roasted red bell pepper, sliced
  • 3 ciabatta or focaccia rolls
  • 3 tablespoons pesto

Instructions

  1. Heat the skillet: Heat a large non-stick skillet over medium heat to prepare for cooking the halloumi.
  2. Cook the halloumi: Place the halloumi slices in a single layer in the skillet. Cook for 2 minutes or until lightly browned, then flip and cook for another 2 minutes until both sides are golden brown. The halloumi will release some moisture which will evaporate during cooking.
  3. Prepare the buns: Spread pesto evenly on the bottom half of each ciabatta or focaccia roll, providing a flavorful base for the sandwich.
  4. Assemble the sandwich: Layer the cooked halloumi slices, roasted red bell pepper slices, and baby spinach on top of the pesto-spread bottom bun.
  5. Finish and serve: Place the top half of the bun over the fillings, press gently, and enjoy your freshly made Pesto Halloumi Sandwich!

Notes

  • Halloumi cheese is ideal for grilling or pan-frying due to its high melting point.
  • You can substitute ciabatta or focaccia with any artisanal bread of your choice.
  • For a spicy kick, add some chili flakes or sliced jalapeños.
  • Roasted red peppers can be purchased jarred or made at home.
  • To make it vegan, substitute halloumi with a firm tofu and use vegan pesto.
