A quick and delicious Pizza Melt sandwich featuring a crispy Parmesan butter crust, gooey mozzarella, zesty pizza sauce, and savory pepperoni. Ready in just 15 minutes, it's a perfect single-serving comfort meal.

Ingredients

For the Parmesan Butter

  • 1 Tbsp butter, room temperature
  • 1 Tbsp grated Parmesan
  • 1/2 tsp Italian seasoning

For the Sandwich

  • 2 slices hearty bread
  • 1/3 cup shredded mozzarella
  • 1 Tbsp pizza sauce
  • 6 slices pepperoni

Instructions

  1. Prepare Parmesan Butter: Stir together the room temperature butter, grated Parmesan, and Italian seasoning in a small bowl until evenly combined. This mixture will add a flavorful and crispy crust to the sandwich.
  2. Assemble the Sandwich: Spread the Parmesan butter over one side of each slice of bread. Then flip the bread so the un-buttered sides are facing up. On one slice, evenly spread half of the shredded mozzarella. Add small dollops of pizza sauce over the cheese, then layer the pepperoni slices on top. Finish by adding the remaining cheese, then place the second slice of bread on top, buttered side out, to close the sandwich.
  3. Cook the Sandwich: Heat a skillet over medium-low heat. Place the sandwich in the skillet and cook until the bread is golden brown and crispy on each side and the cheese inside has melted, approximately 3-4 minutes per side. Carefully flip to avoid breaking it. Once cooked through, remove from heat.
  4. Serve: Cut the sandwich in half and serve immediately while warm and melty.

Notes

  • Use hearty or artisan bread for the best texture and sturdiness.
  • Cook on medium-low heat to ensure the cheese melts without burning the bread.
  • Feel free to substitute pepperoni with other pizza toppings like sliced mushrooms or bell peppers.
  • Butter should be at room temperature for easier mixing and spreading.
  • For a crispier crust, a cast-iron skillet works well.
