Ingredients

Energy Ball Ingredients

  • 1 cup medjool dates, pitted (approx. 10 dates)
  • 3/4 cup almond flour
  • 1/2 cup desiccated coconut
  • 3 Tbsp raw cacao powder
  • 1 tsp peppermint extract (food grade)
  • 1/2 tsp vanilla extract
  • 2 Tbsp water
  • Pinch of sea salt

  • Mini chocolate chips
  • Extra desiccated coconut

Instructions

  1. Prep: Line a small baking sheet with parchment paper to prepare for placing the energy balls later.
  2. Combine: In a large food processor, add the medjool dates, almond flour, desiccated coconut, raw cacao powder, peppermint extract, vanilla extract, water, and a pinch of sea salt. Pulse until the mixture forms a sticky, cohesive mass that holds together.
  3. Roll: Using approximately one tablespoon of the mixture at a time, scoop it out and roll it between your palms to form smooth, round balls.
  4. Optional Toppings: If desired, place mini chocolate chips or extra desiccated coconut into small separate dishes. Roll each energy ball gently in the chosen topping to coat them evenly. This step is optional and can be skipped for plain balls.
  5. Freeze: Arrange the formed balls on the lined baking sheet. Once all mixture is used, place the baking sheet in the freezer for 1 hour to firm the energy balls before serving.
