Ingredients

Quinoa

  • 1 ½ cups uncooked quinoa

  • 2 ½ cups water

Roasted Vegetables

  • 1 red onion, chopped
  • 1 red pepper, chopped
  • 1 large sweet potato, chopped into cubes
  • 1 large yellow squash, end trimmed and cut into ½-inch pieces
  • 1 green pepper, chopped
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon oregano

To Serve

  • Chopped parsley
  • Tahini sauce

Instructions

  1. Cook the Quinoa: Place the uncooked quinoa, salt, and water in a small saucepan. Bring to a boil over medium-high heat, then reduce to a simmer and cover. Cook for 15 minutes until the quinoa absorbs the water. Remove from heat and let it rest, covered, for 5 minutes to steam. Uncover and fluff quinoa with a fork to separate the grains.
  2. Roast the Vegetables: Preheat your oven to 425°F (220°C). Arrange the chopped red onion, red pepper, sweet potato cubes, yellow squash pieces, and green pepper on a rimmed baking sheet (18 x 13 inches). Drizzle with olive oil and sprinkle with salt, black pepper, garlic powder, and oregano. Toss thoroughly using your hands to coat evenly and spread vegetables in a single layer. Roast for 30 minutes until tender, then flip and broil on high heat for 5 minutes to add a slight char and caramelization.
  3. Assemble the Bowl: Divide the cooked quinoa evenly among four bowls. Top each with the roasted vegetables. Garnish with fresh chopped parsley and drizzle generously with tahini sauce. Serve immediately for a warm, nourishing meal.
