Classic Reuben Sandwich featuring layers of tender corned beef, tangy sauerkraut, melted Swiss cheese, and creamy Russian dressing on toasted rye bread. Ingredients

Sandwich

  • 8 slices rye bread
  • 4 tbsp butter, softened
  • 8 slices Swiss cheese
  • 3/4 lb corned beef
  • 1 cup sauerkraut
  • 1/4 cup Russian dressing (see below)

Russian Dressing

  • 1/2 cup mayonnaise
  • 3 tbsp ketchup
  • 2 tbsp horseradish
  • 2 tsp Worcestershire sauce
  • 1 tbsp granulated sugar
  • 1/4 tsp paprika
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare Russian Dressing: In a medium bowl, whisk together mayonnaise, ketchup, horseradish, Worcestershire sauce, sugar, and paprika until well combined. Season with kosher salt and freshly ground black pepper to taste. Set aside.
  2. Assemble Sandwiches: Butter one side of each rye bread slice. Spread the Russian dressing on the non-buttered side of each slice. On half of the slices, layer Swiss cheese, corned beef, and sauerkraut. Top with remaining slices of bread, dressing side down, to form sandwiches.
  3. Cook Sandwiches: Heat a medium skillet over medium heat. Place one sandwich in the skillet and cook until the bread is golden brown and the cheese is melted, about 3 minutes per side. Repeat with remaining sandwiches.

Notes

  • For extra crispiness, press the sandwich lightly with a spatula while cooking.
  • Use freshly shredded sauerkraut to avoid excess moisture.
  • Feel free to substitute Russian dressing with Thousand Island dressing if preferred.
  • Serve immediately for best taste and texture.
