Ingredients

Marinade and Seasoning

  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons paprika
  • 2 teaspoons dried oregano
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

Main Ingredient

  • 3 pound turkey breast with skin

Garnish and Serving

  • ½ cup fresh cranberries
  • 1 pomegranate, quartered
  • Fresh herbs (for garnish)

Instructions

  1. Preheat the oven: Preheat your oven to 375 degrees Fahrenheit (190 degrees Celsius). Line a baking tray with aluminum foil and keep it ready for the turkey.
  2. Prepare the marinade: In a medium bowl, combine olive oil, lemon juice, Dijon mustard, paprika, dried oregano, salt, black pepper, garlic powder, dried thyme, and dried rosemary. Stir well until all ingredients form a smooth, thick paste.
  3. Season the turkey: Carefully loosen the skin of the turkey breast and spread a portion of the spice paste underneath the skin, ensuring the meat is evenly covered to maximize flavor absorption. Then spread the remaining paste generously all over the exterior of the turkey breast.
  4. Roast the turkey: Place the seasoned turkey breast on the prepared baking tray and roast it in the preheated oven for approximately 1 hour, or until the internal temperature reaches 160 degrees Fahrenheit (71 degrees Celsius) using a meat thermometer for accuracy.
  5. Rest the turkey: Once cooked, remove the turkey breast from the oven and tent it loosely with aluminum foil. Let it rest for 10 minutes to allow juices to redistribute throughout the meat, resulting in a tender and juicy texture.
  6. Slice and serve: After resting, slice the turkey breast evenly. Garnish with fresh cranberries, quartered pomegranate, and fresh herbs for a colorful and festive presentation before serving.

Notes

  • Use a meat thermometer to ensure the turkey is fully cooked and safe to eat.
  • Allowing the turkey to rest after roasting helps retain its juices and improves tenderness.
  • You can substitute dried herbs with fresh herbs for a more vibrant flavor but reduce quantities slightly.
  • Leftover turkey can be stored in the refrigerator for up to 3 days or frozen for longer storage.
  • For a crispier skin, you can broil the turkey for the last 3-5 minutes of roasting, keeping a close eye to prevent burning.
