Ingredients

Tomatoes and Herbs

  • 24 ounces cherry or grape tomatoes (680 grams)
  • 4 large garlic cloves, peeled and smashed
  • 6 sprigs fresh thyme
  • 4 sprigs fresh oregano
  • Kosher salt and freshly cracked black pepper, to taste
  • 1/4 cup good-quality olive oil (60 milliliters)

Cheese and Garnish

  • 8 ounces burrata cheese (226 grams, 1-2 balls)
  • 1/4 cup fresh basil, roughly chopped (12 grams)
  • Balsamic glaze, for drizzling

Serving

  • Crostini, crackers, and/or crusty bread

Instructions

  1. Preheat Oven: Set your oven to 350°F (177°C) to prepare for roasting the tomatoes and herbs evenly.
  2. Prepare Tomatoes and Herbs: Place the cherry or grape tomatoes onto a sheet pan. Scatter the peeled and smashed garlic cloves, thyme sprigs, and oregano sprigs around the tomatoes. Drizzle everything with olive oil, season generously with kosher salt and freshly cracked black pepper, and toss until the tomatoes are thoroughly coated.
  3. Roast the Mixture: Roast the tomatoes and herbs in the oven for 35 to 40 minutes. The tomatoes should burst and develop caramelized edges, releasing rich flavor. Once roasted, allow the mixture to cool for a few minutes, then carefully discard the thyme and oregano sprigs. Spoon the warm roasted tomatoes and garlic onto a small serving platter.
  4. Prepare Burrata: Cut the burrata cheese ball(s) in half and nestle the halves evenly among the roasted tomatoes on the serving platter.
  5. Garnish and Serve: Scatter the roughly chopped fresh basil over the dip, then drizzle with balsamic glaze for a sweet and tangy finish. Serve the warm Roasted Burrata Caprese Dip with crostini, crackers, or crusty bread. Enjoy immediately for best flavor and texture.

Notes

  • Use a high-quality olive oil for the best flavor infusion during roasting.
  • Allow the roasted tomato mixture to cool slightly before adding burrata to avoid melting the cheese too much.
  • The balsamic glaze adds a sweet tang that complements the creamy burrata and roasted tomatoes—adjust quantity to taste.
  • Serve immediately to enjoy the best contrast between warm tomatoes and cool burrata.
  • This dip can be made a few hours ahead; rewarm the tomatoes slightly before serving and add burrata just before serving.
