Cauliflower

  • 1 teaspoon smoked paprika
  • ¼ teaspoon crushed red pepper flakes

Topping

  • ⅔ cup freshly grated Parmesan cheese

Instructions

  1. Preheat the oven: Preheat your oven to 425°F (220°C) and position the oven rack in the center to ensure even roasting.
  2. Season the cauliflower: On a large rimmed sheet pan, toss the cauliflower florets with the extra-virgin olive oil to coat evenly. Then arrange the florets in a single layer on the pan, ensuring there’s no overlap of pieces. Sprinkle the florets evenly with kosher salt, garlic powder, smoked paprika, and crushed red pepper flakes.
  3. Roast the cauliflower: Place the pan in the preheated oven and roast for 20 minutes. After 20 minutes, take the pan out and use a spatula to flip the florets, promoting even caramelization. Return the pan to the oven and roast for an additional 10 minutes, or until the edges of the cauliflower are nicely browned and caramelized, and the florets are fork-tender.
  4. Add Parmesan cheese: Remove the pan from the oven and sprinkle the freshly grated Parmesan cheese evenly over the cauliflower. Return the pan to the oven and continue roasting for about 5 more minutes, until the cheese melts and turns golden brown.
