Chicken

Seasoning & Aromatics

  • ½ teaspoon black pepper
  • 1 bunch thyme + 1 tablespoon fresh thyme
  • 1 head garlic (sliced in half horizontally)
  • ½ onion
  • Lemon slices (for serving)

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (204°C) to ensure it’s hot and ready for roasting the chicken.
  2. Prepare the Chicken: Pat the chicken dry with paper towels to remove excess moisture, which helps crisp the skin. Remove the giblets if present, tuck the wings underneath the breast to prevent burning, and tie the legs together with kitchen twine for even cooking.
  3. Season the Chicken: In a small bowl, mix melted butter, salt, pepper, and fresh thyme. Rub this butter mixture all over the chicken thoroughly, including underneath the skin to maximize flavor infusion.
  4. Stuff the Cavity: Place the garlic halves, onion, and thyme sprigs inside the chicken cavity to impart aromatic flavors during roasting.
  5. Roast the Chicken: Place the chicken breast-side up on a large baking dish and roast in the preheated oven. Roast for about 60 to 75 minutes until the skin is golden brown and a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
