These Rolo Stuffed Ritz Crackers are a delightful sweet and salty treat that combines the buttery crunch of Ritz crackers with the gooey caramel and chocolate center of Rolos, all coated in creamy white chocolate and finished with colorful sprinkles. Perfect for parties or as a fun homemade candy, this recipe is quick and easy, requiring minimal ingredients and just 45 minutes from start to finish.

Ingredients

Crackers and Candy

  • 48 Ritz crackers
  • 24 Rolo candies

Chocolate Coating

  • 10 ounces white chocolate melting wafers
  • ¼ cup sprinkles

Instructions

  1. Preheat Oven: Preheat your oven to 350 degrees F (175 degrees C) to prepare for melting the Rolo candies on the crackers.
  2. Assemble Base: Arrange 24 Ritz crackers on a baking sheet, placing one Rolo candy atop each cracker to prepare for melting.
  3. Melt Rolo Candies: Place the baking sheet in the oven for 3 minutes, allowing the Rolos to soften and melt slightly but not fully liquefy.
  4. Top and Press: Remove the baking sheet from the oven and immediately top each Rolo with another Ritz cracker, gently pressing down to smash the candy and create a sandwich. Allow these to cool completely so the filling sets.
  5. Melt White Chocolate: In a microwave-safe bowl, melt the white chocolate melting wafers by heating in 30-second intervals, stirring between each, until fully melted and smooth.
  6. Dip Crackers: Using a fork, dip each Rolo-stuffed Ritz cracker sandwich into the melted white chocolate, ensuring it is completely coated. Place the coated treats on parchment or wax paper.
  7. Add Sprinkles and Set: While the chocolate coating is still wet, sprinkle the tops with sprinkles for a festive touch. Let them sit at room temperature until the chocolate hardens, or refrigerate to speed up the process.

Notes

  • Make sure not to overbake the Rolo candies; 3 minutes is sufficient to soften without melting completely.
  • Use white chocolate melting wafers for a smooth coating that sets nicely; alternatively, you can use candy melts.
  • Refrigerating after dipping speeds up setting but avoid condensation by letting them come to room temperature before eating.
  • These treats should be stored in a cool, dry place or refrigerated and are best enjoyed within a week.
