Ingredients

Salmon and Marinade

  • 12oz / 340g salmon fillets, sliced into 1-inch cubes, skin and bones removed
  • 2 tablespoons low sodium soy sauce
  • 2 teaspoons honey
  • 1 teaspoon rice vinegar
  • ½ teaspoon toasted sesame oil
  • 1 garlic clove, grated
  • Small cube fresh ginger, grated

Base and Vegetables

  • 1 cup cooked white rice or quinoa
  • 1 medium cucumber, sliced
  • 1 medium carrot, shredded
  • ½ cup frozen edamame beans, defrosted
  • ½ avocado, diced

Optional Garnishes

  • Spicy mayo or sriracha aioli
  • Sesame seeds
  • Green onions

Instructions

  1. Prepare Salmon: Slice the salmon fillets into large 1-inch cubes, removing any skin and bones to ensure clean, bite-sized pieces.
  2. Make Marinade: In a container, combine low sodium soy sauce, honey, rice vinegar, toasted sesame oil, grated garlic, and fresh ginger. Stir well to blend all the flavors. Optionally, reserve extra marinade for use as a drizzle later.
  3. Marinate Salmon: Place the salmon cubes into the marinade and toss gently to coat all pieces evenly. Let it marinate for at least 10 minutes at room temperature or up to a few hours in the fridge to develop flavor.
  4. Prepare Vegetables: While the salmon marinates, slice the cucumber, shred the carrot, and dice the avocado. Defrost the frozen edamame by running it under cold water in a colander.
  5. Cook Salmon - Pan Fry Method: Heat a skillet over medium-high heat and add a light drizzle of oil or oil spray. Arrange the salmon cubes in a single layer without crowding. Cook for 5 to 7 minutes, flipping halfway through, and brush with any leftover marinade during cooking for extra flavor.
  6. Cook Salmon - Air Fryer Method: Preheat the air fryer to 390℉ (200℃). Spray the basket generously with olive oil spray. Place the salmon cubes in a single layer without touching. Air fry for 5 to 8 minutes depending on preferred doneness, flipping halfway and brushing with leftover marinade.
  7. Assemble the Bowl: Arrange the cooked rice or quinoa at the base of your serving bowls. Decoratively place the prepared cucumber slices, shredded carrot, diced avocado, and defrosted edamame beans around the rice. Top with the cooked salmon cubes.
