Instructions

  1. Preheat the Oven: Begin by preheating your oven to 325°F to prepare for slow braising the chuck roast.
  2. Prepare the Sauce: In a medium bowl, whisk together soy sauce, honey, hoisin sauce, rice vinegar, beef broth, coconut sugar (or brown sugar), mashed garlic, sesame oil, red chili flakes, and kosher salt until the mixture is smooth and well combined.
  3. Coat the Roast: Pat your chuck roast dry with paper towels. Place it in a Dutch oven or oven-safe pot with a tight-fitting lid. Pour the sauce evenly over the meat and flip the roast several times to ensure it is thoroughly coated on all sides.
  4. Braise in the Oven: Cover the pot and place it in the preheated oven. Let the roast cook for about 3½ hours. After this time, check doneness by shredding the meat with two forks. If it resists shredding, cover and return to the oven for an additional 30 minutes or until the meat pulls apart easily.
  5. Shred the Meat: Once tender, remove the pot from the oven. Shred the chuck roast directly in the pot using two forks, mixing it well with the savory sauce and juices.
  6. Broil for Caramelization (Optional): For crispy, caramelized bits, place the pot under the broiler on high for 3–4 minutes. Keep a close watch to prevent burning.
