Instructions
Cook Quinoa: Rinse the quinoa under cold water thoroughly. In a small saucepan, bring 2 cups of water to a boil, then add the rinsed quinoa. Cover with a lid and reduce heat to low, allowing it to simmer for 15 minutes or until the water is absorbed and quinoa is tender.
Prepare Vegetables: While quinoa cooks, wash, dry, and slice or dice the spinach, bell pepper, and mushrooms as desired. You may choose to sauté these veggies separately for extra flavor or add them raw according to preference.
Combine and Season: Stir the prepared vegetables and 1/2 tablespoon Adobo seasoning into the cooked quinoa. Mix well, cover the saucepan, and keep warm to let the flavors meld.
Cook Egg: In a small nonstick pan, cook a large egg using your preferred method. The recipe author prefers lightly frying over medium heat, but scrambling, poaching, or over-easy are also excellent options.
Assemble Bowl: Transfer the quinoa and vegetable mixture into a serving bowl.
