Ingredients

Potatoes

  • 4 large russet potatoes (equal to 2 lbs.)
  • ¾ teaspoon salt
  • ¾ cup sour cream
  • 1 tablespoon salted butter

Meat and Vegetables

  • 1 lb. ground beef (85% lean)
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 ½ cups mixed frozen vegetables

Broth and Seasonings

  • 3 tablespoons salted butter (divided, 2 Tbsp and 1 Tbsp)
  • ¼ cup all-purpose flour
  • 4 cups chicken broth
  • 2 cups half and half
  • ¾ teaspoon Worcestershire sauce
  • 2 teaspoons Italian seasoning
  • ½ teaspoon mustard powder
  • ¼ teaspoon ground sage
  • Salt and pepper, to taste

Cheese

  • 2 cups shredded cheddar cheese

Instructions

  1. Prep Work: Shred cheddar cheese from a block, measure out the sour cream and half and half, and let them sit at room temperature to soften. This will help the cheese melt smoothly into the soup.
  2. Cook the Beef: In a large stock pot over medium-high heat, cook and crumble the ground beef until fully cooked through. Drain excess grease carefully, then remove the beef from the pot and set aside.
  3. Boil and Mash Potatoes: Peel the russet potatoes and cut them into thirds. Place them in the stock pot and cover with 1 inch of water, adding ¾ teaspoon salt. Bring to a gentle boil and cook for 10-15 minutes or until the potatoes are very tender when pierced by a fork. Drain the potatoes well, then gently mash them with the sour cream and 1 tablespoon of butter. Set the mashed potatoes aside.
  4. Prepare the Broth Base: Melt 2 tablespoons butter in the same stock pot over medium heat. Add the diced onions and cook until softened and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Add Flour: Sprinkle the flour over the cooked onions and garlic, stirring constantly with a silicone spatula. Cook for 1 full minute to remove raw flour taste, ensuring it forms a smooth, golden roux.
  6. Incorporate Broth: Slowly add the chicken broth in splashes while continuously stirring. Use the spatula to scrape up any browned bits from the bottom of the pot to add depth of flavor.
  7. Season and Add Dairy: Stir in Worcestershire sauce, Italian seasoning, mustard powder, and ground sage. Then gradually add the half and half while stirring. Increase the heat to bring the soup to a boil, then reduce to a simmer.
  8. Combine Mashed Potatoes: Stir the mashed potatoes into the broth until fully combined. Use an immersion blender to blend the soup until creamy and smooth, or carefully transfer the soup to a blender in batches and blend.
  9. Add Meat and Vegetables: Return the cooked ground beef to the pot along with the frozen mixed vegetables. Stir and allow to heat through for about 5 minutes on low heat.
  10. Add Cheese: Remove the soup from heat, then gradually sprinkle in the shredded cheddar cheese, stirring continuously to melt it smoothly into the soup. Make sure the soup is not too hot to avoid cheese clumping. The soup will thicken further as it sits.
  11. Season and Serve: Taste and adjust seasoning with salt and pepper to your preference. Serve hot and enjoy this comforting shepherd's pie-inspired soup.
