Ingredients

Meat and Seasoning

  • 1 tablespoon vegetable oil
  • 3 ½ pounds beef chuck pot roast
  • 2 teaspoons salt
  • 1 teaspoon ground black pepper

Vegetables

  • 1 cup diced carrots
  • 1 cup diced celery
  • 1 cup diced onion

  • ¼ cup butter
  • 1 teaspoon dried rosemary

Instructions

  1. Prepare Ingredients: Gather all ingredients and preheat the oven to 275 degrees F (135 degrees C).
  2. Brown the Roast: Heat vegetable oil in a large oven-safe pot over medium-high heat. Season the beef chuck roast evenly with salt and black pepper. Sear the roast in the hot oil until well browned on both sides, about 4-5 minutes per side. Remove and set aside on a plate.
  3. Sauté Vegetables: In the same pot, add diced carrots, celery, and onion. Cook and stir for about 3 minutes, until the vegetables begin to release their juices and any browned bits on the pot bottom are loosened.
  4. Add Butter and Cook Onions: Stir in the butter and continue cooking until the onions are translucent, approximately 5 minutes.
  5. Add Rosemary and Return Roast: Sprinkle dried rosemary over the vegetables, then return the browned roast to the pot and cover it tightly with a lid.
