This traditional Japanese miso soup recipe features a delicate broth infused with kombu seaweed, rehydrated wakame, silken tofu, and green onions.   • 1 (3-inch) piece kombu
  • 4 cups water

Soup Ingredients

  • 3 tablespoons dried wakame seaweed
  • ¼ cup white miso paste
  • ⅓ cup chopped green onion
  • 6 ounces silken tofu, cubed
  • Tamari, to taste

Instructions

  1. Prepare Kombu Broth: Gently rinse the kombu piece under cold water to clean it. Place the kombu in a medium pot with 4 cups of water and gently simmer over low heat for 10 minutes. Avoid boiling the broth, as boiling can make the kombu release bitter flavors.
  2. Rehydrate Wakame: In a small bowl, soak the 3 tablespoons of dried wakame seaweed in warm water for at least 5 minutes until soft and expanded.
  3. Incorporate Miso Paste: Remove the kombu from the simmering broth. In a separate small bowl, take some hot broth and whisk the ¼ cup white miso paste into it until smooth. Pour this mixture back into the pot and stir gently to incorporate the miso paste evenly into the soup base.
  4. Add Remaining Ingredients and Heat Through: Drain the wakame and add it to the soup along with the ⅓ cup chopped green onions and the cubed 6 ounces silken tofu. Simmer the soup over very low heat for 1 to 2 minutes to warm everything through without boiling.
  5. Season and Serve: Taste the soup and season with tamari to your preference. Ladle into bowls and serve immediately, enjoying the comforting umami flavors.

Notes

  • Do not boil the kombu broth to avoid bitterness.
  • Use silken tofu for a smooth texture; firm tofu will change the mouthfeel.
  • If you prefer a stronger seaweed flavor, you can increase the amount of wakame slightly.
  • Tamari is a gluten-free soy sauce alternative; adjust or omit based on dietary needs.
  • For a vegan version, ensure your miso paste does not contain any fish-based ingredients.
