Simple Sausage Orzo One Pot Recipe

A hearty and flavorful one-pot meal combining savory sausage, tender orzo pasta, and a rich tomato base enhanced with herbs and cream cheese for a creamy finish. Perfect for a quick and satisfying dinner in just 30 minutes.

  • 1 tbsp Olive oil
  • 450 g Sausage
  • 4 Garlic cloves (Peeled and crushed)
  • 1 Red onion (Peeled and finely chopped)
  • 2 Red peppers (Deseeded and cut into 1cm pieces)
  • 400 g Tinned chopped tomatoes (x1 can)
  • 2 tbsp Tomato purée
  • 2 tsp Dried oregano
  • Pinch of chilli flakes
  • 650 ml Hot vegetable stock (Made from a cube is fine)
  • 250 g Dried orzo
  • 100 g Cream cheese
  • 50 g Parmesan (Grated)
  • 15 g Fresh basil leaves (Shredded)
  • Sea salt and freshly ground black pepper

Instructions

  1. Heat the oil: Heat the olive oil in your sauté pan over high heat to prepare for cooking the sausage.
  2. Cook the sausage: Remove the sausages from their skins and add the meat in small chunks to the hot pan. Fry on high heat for 5 minutes until the sausage chunks are golden brown.
  3. Add vegetables: Add the crushed garlic, finely chopped onion, and red pepper pieces to the pan. Cook for 5 minutes until the onion softens and the flavors meld together.
  4. Add liquids and orzo: Stir in the tinned chopped tomatoes, tomato purée, dried oregano, chilli flakes, hot vegetable stock, and dried orzo. Cover the pan with a lid and cook for 10-15 minutes, stirring occasionally until the orzo is tender. Add a splash of water if the mixture becomes too dry before the orzo is fully cooked.
  5. Finish and serve: Stir in the cream cheese just before serving to add creaminess. Top with grated Parmesan and shredded fresh basil leaves. Season with sea salt and freshly ground black pepper to taste.

Notes

  • If you prefer a spicier dish, increase the chilli flakes according to your taste.
  • Use a non-stick sauté pan to prevent the sausage from sticking and to make stirring easier.
  • For a dairy-free option, substitute cream cheese and Parmesan with suitable vegan alternatives.
  • Leftovers can be refrigerated for up to 3 days and reheated gently on the stovetop or microwave.
  • Adding fresh basil at the end preserves its flavor and bright green color.
