A rich and flavorful slow cooker beef curry made with tender braising steak, aromatic spices, and a touch of mango chutney. This easy-to-make dish combines the deep warmth of garam masala, cumin, and fresh ginger with the convenience of slow cooking, perfect for a hearty family meal.

Ingredients

Meat and Stock

  • 1 kg Braising steak
  • 1 Beef stock cube (undiluted, crumbled)

Spices and Paste

  • 200 g Curry spice paste
  • 2 tbsp Ground cumin
  • 2 tsp Garam Masala (divided)
  • 1 tsp Sea salt

Vegetables and Aromatics

  • 2 Onions (peeled and chopped)
  • 4 Cloves Garlic (peeled and chopped)
  • 1 Inch piece Fresh ginger (peeled and finely chopped)
  • 400 g Tin of tomatoes
  • 100 g Spinach leaves

Additional Flavor

  • 4 tbsp Mango chutney

Instructions

  1. Prepare the slow cooker: Place the braising steak, curry spice paste, chopped onions, garlic, ginger, ground cumin, tin of tomatoes, 2 tsp garam masala, sea salt, and crumbled beef stock cube into the slow cooker. Stir gently to combine all ingredients evenly.
  2. Cook the curry: Cover the slow cooker and cook the mixture on HIGH for 4 hours or on LOW for 6 hours. This slow cooking process will tenderize the beef and allow the flavors to meld deeply.
  3. Add finishing touches: Approximately 10 minutes before serving, stir in the spinach leaves, the remaining 2 tsp of garam masala, and the mango chutney. Allow the spinach to wilt and flavors to incorporate before serving.
  4. Serve: Ladle the beef curry into bowls and serve hot, ideally with rice or flatbread for a complete meal experience.

Notes

  • For a spicier curry, add fresh chili or extra curry paste to taste.
  • Adjust cooking time depending on your slow cooker’s heat settings.
  • To thicken the curry, remove the lid near the end of cooking and increase heat to allow some liquid to evaporate.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 2 months.
  • Spinach can be substituted with kale or other leafy greens if preferred.
