Ingredients
Steak
3 pounds sirloin steak, cut into bite-sized pieces
2 teaspoons kosher salt
1 teaspoon black pepper
1 Tablespoon vegetable oil (may need more for searing)
Aromatics & Sauce
1 small sweet onion, thinly sliced
3 cloves garlic, thinly sliced
1 cup unsalted beef stock
1 ounce packet au jus gravy mix
4 tablespoons unsalted butter, thinly sliced
Instructions
Season the steak: Place the sirloin steak pieces in a large bowl. Sprinkle with kosher salt and black pepper, then toss until well combined and evenly seasoned.
Sear the steak: Heat a large skillet over medium-high heat and add vegetable oil. Once the oil is very hot, sear the steak pieces in batches to brown the exterior without cooking through. Add more oil if necessary to prevent sticking.
Transfer to slow cooker: Add the seared steak pieces into a 6-quart slow cooker. Add the thinly sliced sweet onion and garlic. Gently stir to combine all ingredients.
Add liquids and butter: Pour in the unsalted beef stock, sprinkle the au jus gravy mix evenly over the mixture, and lay the thinly sliced butter slices on top.
Slow cook: Cover and cook on high for 3 to 4 hours or on low for 6 to 8 hours. Stir once every hour if possible to blend flavors.
Serve: Once cooked, serve the garlic butter steak bites hot, ideally accompanied by mashed potatoes, egg noodles, or rice.
Notes
For best flavor, sear the steak in batches to avoid overcrowding the pan.
Stirring occasionally during slow cooking helps distribute flavors and butter evenly.
Serve with a starch like mashed potatoes, rice, or noodles to soak up the delicious au jus sauce.
Adjust seasoning as needed after cooking since slow cooking can mellow flavors.
