A simple and flavorful slow cooker recipe for taco meat that requires no pre-cooking. Ground beef is combined directly in the slow cooker with salsa and spices, then cooked until tender and ready to serve. Perfect for easy weeknight dinners or meal prep with minimal hands-on time.

Ingredients

Meat

  • 2 pounds 85/15 lean ground beef

Seasonings & Sauce

  • 1 (16-oz) jar chunky style salsa
  • 1 teaspoon granulated garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon mild chili powder
  • 1 teaspoon kosher salt

Instructions

  1. Combine Ingredients: Add the ground beef, salsa, garlic powder, cumin, smoked paprika, chili powder, and kosher salt to a 6-quart slow cooker. Break up the meat into small pieces and stir thoroughly to evenly incorporate all the spices and salsa.
  2. Cook the Meat: Cover with the lid and cook on high heat for 2 hours or on low heat for 4 hours. Avoid removing the lid during cooking to retain moisture and ensure even cooking.
  3. Finish and Serve: Once cooking is complete, stir the taco meat to mix any juices. For a wetter texture, serve as-is; for a drier consistency, drain off some or all of the liquid. Serve the taco meat with taco shells or warm tortillas along with your preferred toppings.

Notes

  • Use 85/15 lean ground beef to balance flavor and fat content.
  • Do not open the slow cooker lid during cooking to maintain heat and moisture.
  • You can adjust the spice levels by adding more or less chili powder or salsa according to taste.
