Ingredients

Sweet Potatoes

  • 4 medium sweet potatoes, scrubbed

Garlic Thyme Butter

  • ¼ cup (1/2 stick) unsalted butter, melted
  • 1 tablespoon minced garlic
  • 1 tablespoon minced fresh thyme leaves
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Toppings

  • ½ cup crumbled feta cheese
  • ¼ teaspoon red pepper flakes
  • 2 tablespoons minced fresh parsley (or 3 tablespoons minced scallions)

Instructions

  1. Preheat the oven. Preheat your oven to 425°F (220°C). Prepare a rimmed baking sheet by spraying it lightly with nonstick spray to prevent the sweet potatoes from sticking during baking.
  2. Slice the potatoes. Cut the sweet potatoes into 1-inch thick rounds to ensure even cooking and tenderness.
  3. Brush the potatoes with flavored butter. In a large bowl, mix together the melted butter, minced garlic, fresh thyme leaves, kosher salt, and freshly ground black pepper. Either toss the potato rounds in this mixture until well coated or lay the slices on the baking sheet and brush both sides generously with the garlic-thyme butter.
  4. Bake the potatoes. Arrange the potato slices in a single layer on the baking sheet with some space between them. Bake in the preheated oven for 25 to 30 minutes until the potatoes are tender when pierced with a fork.
  5. Smash the potatoes. Remove the baking sheet from the oven and change the oven setting to broil. Using a potato masher, fork, or the bottom of a glass, gently press down on each potato round to flatten them to about ½-inch thickness. The rounds will lose their shape and the skin will tear slightly, which creates a rustic look and helps the toppings to adhere.
  6. Add feta and broil. Evenly sprinkle the crumbled feta cheese over the smashed sweet potatoes. Place the tray under the broiler for 2 to 4 minutes until the feta melts and starts to brown slightly. Keep a close eye to prevent burning.
  7. Serve with toppings. Remove from the oven and sprinkle with red pepper flakes and minced fresh parsley or scallions. Serve the smashed sweet potatoes hot or warm for a delicious side dish.
