Chicken and Coating

  • 3 lbs chicken thighs (bone-in, skin-on)

Instructions

  1. Prepare the seasoned flour: In a shallow dish or plate, combine the all-purpose flour, onion powder, garlic powder, paprika, seasoned salt, and black pepper. Mix thoroughly to ensure even distribution of spices.
  2. Coat the chicken: Place the chicken thighs into the seasoned flour mixture, coating them evenly on both sides. Set the coated chicken aside and keep the remaining seasoned flour mixture for later steps.
  3. Brown the chicken: Heat a large pan over medium-high heat and add the olive oil. Once hot, add the coated chicken thighs and cook each side for 4-6 minutes until golden brown. Remove the chicken from the pan and set aside on a plate, retaining any juices.
  4. Sauté onions and garlic: Reduce heat to medium, add the butter to the pan, then add the sliced onions. Sauté until softened, about 3-4 minutes. Add the chopped garlic and cook for an additional 1 minute until fragrant.
  5. Create the gravy base: Add the reserved seasoned flour mixture to the pan. Stir and cook for about 1 minute to remove the raw flour taste. Slowly pour in the chicken broth while stirring to prevent lumps.
  6. Simmer the chicken: Return the browned chicken thighs along with any resting juices to the pan. Cover the pan, reduce heat to medium-low, and let the chicken simmer for 25-28 minutes or until fully cooked and tender.
  7. Finish the gravy: Remove the lid and stir in the heavy cream, blending it smoothly into the gravy. Allow the mixture to heat through without boiling.
