These Soft Rum Caramels are a deliciously smooth and creamy candy treat with a subtle rum flavor. Perfectly chewy with a buttery texture, these homemade caramels are easy to make and set beautifully. Wrapped in wax paper, they’re ideal for sharing or gifting.

  • 1 cup granulated sugar
  • 1 cup light corn syrup
  • ¼ teaspoon kosher salt
  • ¼ cup unsalted butter, cubed
  • 1 cup heavy cream
  • 1 teaspoon rum extract
  • Wax paper (optional for wrapping)

Instructions

  1. Prepare the Pan: Line a 9x9-inch pan with parchment paper and set it aside. This will make it easy to remove the caramel once it’s set.
  2. Combine Sugars and Salt: In a high-sided pot over medium-high heat, combine the granulated sugar, light corn syrup, and kosher salt. Stir gently to start dissolving the sugar without creating hot spots that could burn the mixture.
  3. Dissolve Sugar Completely: Continue to stir slowly and constantly until the sugar has fully dissolved and the mixture begins to bubble gently.
  4. Add Heavy Cream: VERY SLOWLY drizzle in the cold heavy cream while continuously stirring. Adding the cream slowly is important to keep the mixture bubbling and prevent temperature shocks.
  5. Add Butter: Once all the heavy cream is incorporated, add the cubed butter while stirring constantly to blend it smoothly into the caramel mixture.
  6. Cook to Temperature: Keep stirring gently and cook the mixture until it reaches 245°F (firm ball stage) on a candy thermometer, about 15 to 20 minutes.
  7. Add Rum Extract and Pour: Remove the pot from heat and quickly stir in the rum extract. Immediately pour the hot caramel into the prepared pan to set.
  8. Let Set: Allow the caramel to cool at room temperature for a few hours until it’s firm but still soft and chewy.
  9. Cut and Wrap: Once set, lift the caramel block from the pan using the parchment paper. Cut into small squares and wrap each piece in wax paper to prevent sticking. Enjoy!
