These Sourdough Discard Crackers are a simple, delicious way to use up your sourdough starter discard. Crispy and thin, they're perfect for snacking or pairing with cheese and dips.   • 2 tablespoons unsalted butter (melted)
  • 1/4 teaspoon fine sea salt

  • Everything bagel seasoning

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Combine Ingredients: Melt the butter in a large measuring cup or mixing bowl and allow it to cool to lukewarm. Add the sourdough discard and fine sea salt, then stir thoroughly with a spatula until fully combined into a smooth batter.
  3. Spread Batter: Pour the mixture onto the lined baking sheet and use an offset spatula to spread it into a very thin, even layer, nearly transparent. Aim for a rectangle approximately 13x11 inches for reference.
  4. Add Seasonings: Lightly sprinkle flaky sea salt and any other desired seasonings such as everything bagel seasoning or sesame seeds over the surface. Be careful not to over-salt since the crackers are thin.
  5. Initial Bake: Immediately place the baking sheet in the preheated oven to prevent sticking. Bake for 10 minutes until the batter starts to set but is not yet fully crisp.
  6. Score Crackers: Remove from oven and use a pizza cutter to score the batter into bite-sized squares, making it easier to break apart once baked.
  7. Final Bake: Return the tray to the oven and bake for an additional 15-20 minutes or until the crackers turn golden and harden completely. If they feel soft, continue baking until firm to the touch.
