Ingredients

Chicken and Spice Mix

  • 300 g chicken breast
  • 1 tsp cayenne pepper
  • 1 tsp turmeric
  • 1 tsp ground coriander
  • 1 tsp ground cumin

Vegetables and Aromatics

  • 1/2 onion, diced
  • 2 cloves garlic, chopped (approx. 2 tsp)
  • 1 small jalapeño, chopped (approx. 3 tsp)
  • 1 cm piece ginger, chopped (approx. 1 tsp)
  • 3 tomatoes, chopped
  • 1 tbsp chopped parsley (optional, added when boiling)

  • 1 tbsp olive oil
  • 400 ml coconut milk

Instructions

  1. Marinate the Chicken: In a small bowl, combine the chicken breast with cayenne pepper, turmeric, ground coriander, and ground cumin. Mix well to coat the chicken evenly. You may marinate for extra flavor if time permits, but this step is optional.
  2. Brown the Chicken and Saute Aromatics: Heat olive oil in a small casserole pot or Dutch oven over medium heat. Add the seasoned chicken and fry until lightly browned. Then add the diced onion, chopped garlic, jalapeño, and ginger. Cook until the onions soften and become translucent, releasing their aromas.
  3. Cook Tomatoes: Add the chopped tomatoes to the pot and cook for 1-2 minutes until they begin to soften and break down, blending their flavor with the sautéed aromatics and chicken.
  4. Simmer with Coconut Milk: Pour in the coconut milk and add chopped parsley if using. Bring the mixture to a boil, then reduce heat to low and let it simmer gently for about 15 minutes. This allows the chicken to cook through and the flavors to fully meld into a rich curry sauce.
