  • Onion, finely chopped – 1/2 medium (about 75 grams)
  • Bell pepper, chopped – 1/2 medium (about 75 grams)
  • Garlic, minced – 2 cloves
  • Jalapeño, minced – 1 small
  • Green onions, chopped – 2 tablespoons
  • Jalapeño slices – for garnish

Liquids & Dairy

  • Butter or oil – 2 tablespoons
  • Milk – 1 cup (240 ml)
  • Chicken broth – 3 cups (720 ml)
  • Soy sauce – 1 tablespoon

Spices & Seasonings

  • Salt – to taste
  • Black pepper – to taste
  • Garlic powder – 1/2 teaspoon
  • Paprika – 1/2 teaspoon
  • Smoked paprika – 1 teaspoon
  • Cayenne pepper – 1/4 teaspoon
  • Cajun seasoning – 1 teaspoon
  • Chili garlic paste or Sriracha – 1 teaspoon (adjust to taste)

Pasta

  • Ramen noodles – 2 servings (about 180 grams)

Instructions

  1. Sear the sausage: Heat butter or oil in a skillet over medium heat. Add the sliced sausage and sear until browned and slightly crispy, about 3 to 4 minutes. Remove from skillet and set aside to keep warm.
  2. Cook the shrimp: Season shrimp with salt, pepper, garlic powder, and paprika. In the same skillet, sear the shrimp for about 2 minutes on each side until pink and cooked through. Remove shrimp and set aside.
  3. Sauté aromatics: In a pot, melt butter with olive oil over medium heat. Add chopped onion and bell pepper, sautéing for 3 minutes until softened. Add minced garlic and jalapeño, cooking for an additional 1 minute to release flavors.
  4. Add spices and liquids: Stir in smoked paprika, cayenne pepper, and Cajun seasoning. Pour in chicken broth and soy sauce, bringing the mixture to a simmer. Let simmer gently for 5 minutes to meld the flavors.
  5. Create the creamy broth: Lower the heat and stir in milk and shredded sharp cheddar cheese until fully melted and creamy. Add chili garlic paste or Sriracha according to your spice preference and mix well.
  6. Cook the noodles: Add ramen noodles directly to the simmering broth. Cook for 3 to 4 minutes, stirring occasionally, until noodles are tender and have absorbed the broth’s flavor.
  7. Assemble and serve: Divide noodles and broth into serving bowls. Top each with seared sausage, cooked shrimp, chopped green onions, and jalapeño slices for extra heat. Optionally, add soft-boiled eggs. Serve immediately and enjoy!

Notes

  • Adjust the amount of chili garlic paste or Sriracha to control the heat level.
  • Soft-boiled eggs add a creamy texture and protein boost but are optional.
  • Use sharp cheddar for best melting and flavor in the creamy broth.
  • For a dairy-free option, substitute milk with coconut milk and omit cheese, though this will alter the flavor.
  • Make sure to not overcook the shrimp to keep them tender.
