Ingredients

Pizza Base

  • 1 pound pizza dough

Spinach and Artichoke Dip Topping

  • 4 ounces low fat cream cheese, room temperature
  • 1/4 cup plain Greek yogurt
  • 4 ounces frozen spinach, defrosted and liquid squeezed out
  • 2/3 cup frozen artichokes, defrosted and chopped
  • 6 ounces mozzarella cheese, shredded
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • Pinch of crushed red pepper flakes
  • Pinch of black pepper
  • Cooking spray or olive oil (for greasing)

Instructions

  1. Preheat Oven: Preheat your oven to 450° F (232° C) and prepare a baking sheet or pizza stone by spraying it with cooking spray or brushing lightly with olive oil to prevent sticking.
  2. Make the Dip Mixture: In a large bowl, combine the room temperature low-fat cream cheese, plain Greek yogurt, garlic powder, kosher salt, black pepper, and crushed red pepper flakes. Stir until the mixture is smooth and creamy. Fold in the defrosted and drained spinach, chopped artichokes, and 1/4 cup of shredded mozzarella cheese until evenly incorporated.
  3. Prepare Pizza Dough: Stretch or roll the pizza dough into a circle shape that fits your prepared baking sheet or pizza stone, creating an even thickness across the dough.
  4. Assemble the Pizza: Spread the spinach and artichoke dip mixture evenly over the stretched pizza dough, covering the surface. Then sprinkle the remaining shredded mozzarella cheese evenly over the top of the dip layer.
  5. Bake: Place the assembled pizza on the middle rack of the preheated oven. Bake for 10 to 15 minutes or until the cheese is golden brown and bubbly and the crust is cooked through and crisp.

Notes

  • Make sure to squeeze out excess liquid from the spinach to avoid a soggy crust.
  • You can substitute frozen vegetables with fresh if desired, adjusting cooking times accordingly.
  • For a crispier crust, pre-bake the pizza dough for 5 minutes before adding the topping.
  • Adjust crushed red pepper flakes based on your preferred spice level.
  • Use whole milk or part-skim mozzarella depending on fat preference.
