Delightful spinach and cheese puffs made with creamy cream cheese, savory parmesan, and tender spinach, all wrapped in flaky puff pastry and baked to golden perfection. These bite-sized appetizers are perfect for parties or a savory snack.

Ingredients

Cheese Mixture

  • 1 (8 oz) block softened cream cheese
  • 1/2 cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • 1 egg (divided)
  • 1 tsp salt
  • 1/2 tsp pepper

Vegetables

  • 1 (10 oz) bag frozen spinach (thawed and drained)

Puff Pastry

  • 1 (2 ct) box store-bought frozen puff pastry sheets (thawed)

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees F and line two baking trays with parchment paper or silicone baking mats to prepare for baking.
  2. Mix Cheese Ingredients: In a medium mixing bowl, combine the softened cream cheese, grated parmesan cheese, garlic powder, onion powder, Italian seasoning, 1 egg, salt, and pepper, mixing until smooth and well blended.
  3. Prepare Spinach: Place the frozen spinach in a bowl of hot water and let it sit for 2 minutes to thaw completely. Drain the water, then squeeze out as much liquid as possible to avoid soggy filling.
  4. Combine Spinach with Cheese Mixture: Add the well-drained spinach into the cheese mixture and stir to combine thoroughly. Set the filling aside for assembly.
  5. Prepare Pastry Sheets: Unroll one sheet of the thawed puff pastry at a time and cut each sheet into 9 equal squares for easy portioning.
  6. Fill Pastry Squares: Rotate each square so it appears as a diamond shape. Spoon a moderate amount of the filling down the center of each square, leaving about half an inch of pastry edges free for sealing.
  7. Brush Egg Wash: Lightly brush the right corner of each pastry square with some of the whisked egg to help with sealing.
  8. Fold and Seal: Fold the left corner over the filling, then fold the egg-washed right corner over the first fold. Press gently along the edges to seal the puff pastry and keep the filling inside.
  9. Final Egg Wash and Parmesan: Brush each puff with the remaining whisked egg to create a golden crust when baked and sprinkle more grated parmesan cheese on top for extra flavor and color.
  10. Bake: Place the baking trays in the oven and bake for 18 to 20 minutes, or until the puffs are puffed up and golden brown, indicating they are fully cooked and deliciously crispy.

Notes

  • Make sure to thoroughly drain and squeeze the spinach to prevent soggy pastry.
  • If puff pastry is frozen, thaw according to package instructions before use.
  • Feel free to add a pinch of nutmeg to the filling for a warm, subtle spice.
  • Serve warm for best flavor and texture.
  • These puffs can be made ahead and reheated in the oven to maintain crispiness.
