Ingredients

Egg Mixture

  • 6 large eggs
  • 1 cup full-fat cottage cheese

Vegetables & Herbs

  • 1 1/2 cups fresh spinach (or 3/4 cup frozen, thawed and drained)
  • 1/4 cup chopped scallions or onions (optional)
  • Optional: chopped herbs, mushrooms, red pepper flakes

Seasoning & Cooking

  • Salt and pepper to taste
  • Olive oil or butter for greasing pan

Instructions

  1. Preheat and prepare pan: Preheat your oven to 375°F (190°C) and grease an 8×8-inch baking dish with olive oil or butter to prevent sticking.
  2. Mix eggs and cottage cheese: In a large bowl, whisk together the 6 large eggs and 1 cup of full-fat cottage cheese until the mixture is fully combined and smooth.
  3. Add spinach and onions: Fold in the fresh spinach (or thawed frozen spinach) along with the chopped scallions or onions if using, and season the mixture with salt and pepper according to your taste preferences.
  4. Pour and distribute: Pour the prepared mixture into the greased baking dish and spread it out evenly to ensure uniform cooking.
  5. Bake: Place the dish in the preheated oven and bake for 30 to 35 minutes, or until the center is set and the edges turn lightly golden brown.
  6. Cool and serve: Remove the bake from the oven and let it cool for about 10 minutes, then slice into servings and enjoy warm.

Notes

  • You can customize the egg bake by adding your favorite herbs, mushrooms, or a pinch of red pepper flakes for extra flavor.
  • Using fresh spinach gives a milder texture and flavor, but frozen spinach is a great convenient alternative when properly thawed and drained.
  • For a lower fat option, try using low-fat cottage cheese instead of full-fat.
  • This recipe can be made ahead and reheated for a quick breakfast or snack.
  • Make sure not to overbake to keep the bake moist and tender.
