These Strawberries and Cream Energy Balls are a delicious and healthy snack, packed with natural sweetness from medjool dates and freeze-dried strawberries. Ingredients

Dry Ingredients

  • 2 cups raw cashews
  • 6 pitted Medjool dates
  • 3/4 cup unsweetened shredded coconut, divided (optional)
  • 1 Tbsp. hemp seeds or chia seeds
  • 1/4 tsp. sea salt
  • 1/3 cup freeze-dried strawberries

Wet Ingredients

  • 1/3 cup creamy cashew butter
  • 3 Tbsp. pure maple syrup
  • 1 tsp. vanilla extract

Instructions

  1. Prepare the mixture: Place the raw cashews in a blender and blend until they are finely chopped. Add the pitted Medjool dates, 1/4 cup of the shredded coconut, creamy cashew butter, pure maple syrup, chosen seeds (hemp or chia), vanilla extract, and sea salt. Blend the mixture until it is well combined and clumps together. Then, add the freeze-dried strawberries and blend again until the strawberries are evenly dispersed throughout the mixture, stopping to scrape down the sides and mix manually as needed.
  2. Form the energy balls: Turn the blended mixture out into a bowl. Use a small cookie scoop or tablespoon to measure out 24 equal portions. Roll each portion into a ball using your hands to ensure uniform size and shape.
  3. Coat and chill: Spread the remaining 1/2 cup of shredded coconut on a plate. Roll each energy ball in the coconut to coat them evenly. Place the coated balls in the refrigerator and chill until firm, about 30 minutes, before serving.

Notes

  • You can substitute hemp seeds with chia seeds according to your preference or dietary needs.
  • The shredded coconut coating is optional, but it adds a nice texture and flavor to the energy balls.
