Strawberry Jello Fluff Salad is a delightful, creamy dessert salad combining the fruity flavors of strawberry jello, fresh bananas, and strawberries with a fluffy texture from vanilla pudding, Cool Whip, and mini marshmallows. This chilled treat is perfect for potlucks, family gatherings, or as a refreshing summer dessert.

Ingredients

Jello Mixture

  • 4.6 ounces cook and serve vanilla pudding mix (large box)
  • 6 ounces strawberry jello package (large box)
  • 3 cups water

Mix-ins

  • 16 ounces Cool Whip (thawed)
  • 5 ounces mini marshmallows (half of a 10 ounce bag)
  • 3 bananas (sliced)
  • 2 cups strawberries (sliced)

Instructions

  1. Prepare Jello Mixture: In a medium saucepan, whisk together the vanilla pudding mix, strawberry jello mix, and water until fully combined. Cook over medium heat, stirring constantly, and bring the mixture to a boil.
  2. Cool and Refrigerate: Remove the saucepan from heat and pour the hot jello mixture into a large mixing bowl. Cover the bowl tightly with plastic wrap to prevent a skin from forming.
  3. Chill Until Thickened: Place the bowl in the refrigerator and chill for about 4 to 6 hours or overnight until the mixture has thickened to a pudding-like consistency.
  4. Beat Until Creamy: Once thickened, use an electric hand mixer to beat the mixture until it becomes creamy and smooth, enhancing its fluffiness.
  5. Fold in Cool Whip and Mix-ins: Gently fold in the thawed Cool Whip, mini marshmallows, sliced bananas, and sliced strawberries. Mix carefully to maintain a light and airy texture.
  6. Final Chill: Cover the bowl again and chill the salad for about one hour to allow flavors to meld and the salad to set before serving.

Notes

  • For best texture, use fresh ripe bananas and strawberries.
  • Ensure Cool Whip is fully thawed before folding into the mixture.
  • You can substitute mini marshmallows with regular-sized by cutting them into smaller pieces.
  • This salad is best served chilled and should be consumed within 2 days of preparation.
  • Feel free to add other fruits like blueberries or grapes for variation.
