Ingredients

For the Mushrooms

  • 12 whole fresh mushrooms, tough ends trimmed

  • 1 tablespoon vegetable oil
  • 1 tablespoon minced garlic
  • 1 (8 ounce) package cream cheese, softened
  • ¼ cup grated Parmesan cheese
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon onion powder
  • ¼ teaspoon cayenne pepper

Instructions

  1. Prepare the Oven and Pan: Preheat your oven to 350 degrees F (175 degrees C) and grease a baking sheet with cooking spray to prevent sticking.
  2. Clean and Prep Mushrooms: Gently wipe the mushrooms clean with a damp paper towel. Carefully remove the stems from the caps and finely chop the stems; set the caps aside.
  3. Cook the Filling: Heat the vegetable oil in a large skillet over medium heat. Add the chopped mushroom stems and minced garlic, cooking until the moisture evaporates and the mixture is dry, about 3 to 5 minutes, being careful to avoid burning the garlic.
  4. Mix the Cream Cheese Filling: Transfer the cooked mushroom mixture to a bowl and allow it to cool completely, approximately 10 minutes. Once cooled, stir in the softened cream cheese, grated Parmesan, black pepper, onion powder, and cayenne pepper until the mixture is thick and well combined.
  5. Stuff the Mushrooms: Using a small spoon, generously fill each mushroom cap with the cream cheese mixture. Arrange the stuffed mushrooms evenly on the prepared baking sheet.
  6. Bake: Place the stuffed mushrooms in the preheated oven and bake for about 20 minutes, or until the filling is hot and you see liquid forming under each cap indicating they are cooked through.
