  • 1 ½ cups water
  • 1 cup long grain white rice, rinsed and drained
  • 1 cup shredded cheddar cheese, mozzarella cheese, or a combination (4 ounces, divided)
  • 2 tablespoons chopped fresh parsley (optional, for serving)

Instructions

  1. Cook aromatics and meat: Heat olive oil in a large skillet over medium-high heat. Add chopped onion, red and green bell peppers, and ground turkey or beef. Cook, breaking up the meat, until browned, about 6-8 minutes. If using ground beef, drain excess grease. Add minced garlic and cook for 30 seconds while stirring.
  2. Add liquids and rice: Stir in diced tomatoes, tomato sauce, Italian seasoning, garlic powder, salt, black pepper, water, and rinsed rice. Bring the mixture to a simmer over medium heat.
  3. Simmer until rice is tender: Reduce heat to low to maintain a gentle simmer. Cover the skillet and cook for about 15 minutes, stirring occasionally to prevent rice from sticking to the bottom. Cook until rice is tender and liquid is mostly absorbed.
  4. Incorporate cheese and rest: Stir in half of the shredded cheese (½ cup). Sprinkle the remaining cheese evenly over the top. Cover the skillet again and let it rest for 5 minutes off the heat to allow the cheese to melt.
  5. Garnish and serve: Sprinkle with chopped fresh parsley, if desired, and serve warm.
