Ingredients

Beef Filet

  • 20 oz (600g) filet mignon / beef fillet (4 x 5oz/150g steaks)
  • 1 tbsp olive oil
  • 2 tsp salt
  • 1 tsp pepper
  • 2 tbsp butter
  • 2 sprigs fresh rosemary
  • 3 garlic cloves (smashed with the edge of a knife)

Shrimp

  • 14 oz (400g) shrimp (peeled and deveined)
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 tbsp butter
  • 4 garlic cloves (minced/crushed)
  • 1 tsp dried oregano

Sauce

  • 1 cup heavy cream
  • 1-2 tsp lemon juice (to taste)
  • Salt and black pepper (to taste)

Instructions

  1. Season Steaks: Drizzle the steaks with olive oil then season on both sides with salt and pepper to prepare them for cooking.
  2. Sear Steaks: Heat a large skillet or frying pan over medium-high heat, add the steaks, and sear for 2-3 minutes per side until a good crust forms on the meat.
  3. Baste Steaks: Add butter, rosemary, and smashed garlic to the pan. Tilt the pan to one side and use a spoon to baste the steaks with the aromatic melted butter for another 2-3 minutes, cooking them to your preferred doneness.
  4. Rest Steaks: Remove the steaks from the pan, cover loosely with foil, and let them rest to allow the juices to redistribute.
  5. Cook Shrimp: Season the shrimp with olive oil, smoked paprika, garlic powder, and salt. Add to the same pan and cook for 1-2 minutes until just cooked through, then remove and set aside.
  6. Make Sauce: In the same pan, melt butter and add minced garlic and dried oregano. Cook until fragrant, then pour in the heavy cream. Season with lemon juice, salt, and black pepper. Simmer for a few minutes until the sauce has reduced slightly.
  7. Combine and Reheat: Add the cooked shrimp and steaks back into the sauce, allowing them to reheat gently for about one minute to meld flavors.
  8. Serve: Plate the surf and turf with mashed potatoes and asparagus or your favorite side dishes for a perfect meal.

Notes

  • For steak doneness, use a meat thermometer: 125°F for rare, 135°F for medium-rare, 145°F for medium, and 160°F for well done.
  • Allowing steaks to rest helps retain juices for optimal tenderness.
  • Shrimp cooks quickly; avoid overcooking to keep them tender.
  • Adjust lemon juice in the sauce to your preferred level of acidity.
  • Complement this dish with sides like mashed potatoes and asparagus for a balanced meal.
